Ingredients
1 onion, diced
1 tablespoon cumin powder
1 tablespoon curry powder
1 cup assorted vegetable
1 tablespoon tomato paste
1 cup of water
1 cup natural yoghurt
1 cup onion rice
Instructions
Step 1: In a pot heat 8 tablespoons of oil and toast spices until browned and golden.
Step 2: Add onions and fry further for 2 minutes.
Step 3: Add tomato paste and fry for 2 minutes.
Step 4: Add the vegetables and toss allow to cook further on low for 3 min
Step 5: Add 1 cup of water and cook down until thick sauce consistency is attained and the vegetables are just cooked.
Step 6: Pour over yoghurt and cook further for 4 minutes
Step 7: In a glass bowl, layer vegetable Biryani with the onion rice.
Step 8: Serve hot.
