This burger should be able to cure the Monday blues that we oh so detest. It’s fun,easy and perfect for that extended weekend feeling, make this a day before and cook the next day. Be the envy of your work place, your colleagues will be asking for a bite hoping to feel like it’s a quick Saturday with the gang.

Step 1: In a large bowl, mix together the mince, garlic, tomato ketchup, mustard, egg, chilli and onion.
Step 2: Dive in with your hands and mix until the ingredients are well blended
Step 3: Just before cooking, add the spring onions and basil to the mixture and divide into four patties
Step 4: Heat a little olive oil in a large non-stick frying pan and fry the burgers
Step 5: Turn them once only, cooking for about 5–6 minutes on each side. (Alternatively you can cook them under a grill for the same time turning halfway through)
Step 6: Place onions and sliced onion into a separate pot and cook down with sugar, a pinch of salt and black pepper
