Malenge!!! Huh, most of us really don’t like the taste of pumpkin and more often than not, consider it as a delicacy for weaning babies.  But it’s just because we refuse to get adventurous with them!!! Loosen up a bit and try out this yummy Swahili Malenge Soup:



Step 1: Pan fry peeled and cubed butternut.
Step 2: In a separate sufuria /pot add oil, a crack of black pepper and a sprinkle of salt then add roughly chopped onions, coriander stalks and whole spices.
Step 3: Allow to cook until translucent.
Step 4: Add the ginger and garlic paste, allow to cook then add the chicken cubes.
Step 5: Add fried butternut, mix slightly until all the contents are evenly mixed.
Step 6: After simmering for 30 minutes, add coconut milk and allow to simmer for another 10 minutes.
Step 7: Finally add freshly chopped coriander and allow to simmer for 5 minutes.
Step 8: Check seasoning, and blend.
Step 9: Serve hot with bread.
