Step 1: In a small pot of boiling water add the vinegar and salt and mix well.
Step 2: Allow to cook through.
Step 3: Add your eggs, 2 at a time and allow to poach lightly.
Step 4: Serve hot with tomatoes and garnish with coriander and black pepper and olive oil.
