Step 1: In a large pot heat the 1/8 cup of oil and cook the sliced onion until translucent and cooked through, add your spice mix and allow to toast lightly on low heat.
Step 2: Add garlic and ginger paste and allow to become aromatic. Add your lamb and curry powder and cook lightly until sealed, add your tomato paste.
Step 3: Add 3 cups of water and your washed rice, mix well, cover and allow to cook slowly until rice is cooked through.
Step 4: Serve hot with kachumabri.
