Step 1: After boiling your pasta, take 1/2 cup of the pasta water and set it aside.
Step 2: In a large pan heat 3 tablespoons of olive oil and pan fry your onion until slightly browned.
Step 3: Add the garlic and allow to toast lightly for 5 minutes.
Step 4: Add the eggs and scramble until seperated and cooked, add your pasta and toss in the eggs.
Step 5: Add the pasta water and toss further, allow to evaporate and then serve hot.
