Spicy Spinach and Onion Fritata

1 bunch of spinach, shredded 1 red onion, sliced 4 garlic cloves, crushed 2 spring onions, sliced 4 eggs 1 teaspoon butter 1 cup of cooking cream 1 red chili,sliced 3 tomatoes, sliced

Step by Step method

    Step 1: In a pot, add 2 tablespoons of olive oil and the butter, start by frying the spring onions for about 1 minute, add the red onions and fry for another minute Step 2: Add the garlic and shortly after, the shredded spinach. Step 3: Allow to wilt or add 1/4 cup of boiling water. Step 4: After wilting, set aside to cool. Step 5: In a seperate bowl, whisk the eggs, the cream and the chili, with a pinch of salt and a pinch of black pepper, whisk thourougly.
