Ingredients
1/8 cup oil
1 red onion, chopped
1 tablespoon garlic paste
1 teaspoon cumin powder
2 grated tomatoes
1/2 English cucumber, cubed
1/2 green capsicum cubed
1/2 lemon juice
1/2 bunch coriander
Instructions
Step 1: In a small pot heat the oil and cook your onions until browned, add your garlic paste and spices and toast lightly for 10 minutes.
Step 2: Pour in your tomatoes shortly after then add the other ingredients and mix well.
Step 3: Allow to rest lightly before serving.
Step 4: Serve with spring rolls and samosas.
