Step 1: In a small pot place some boiling water and place a large bowl over the top of the pot, ensuring that the water DOESN'T touch the bowl.
Step 2: Place the eggs and sugar in the bowl and whisk over the heat until the eggs are fluffy.
Step 3: Add the melted butter and whisk further for another 10 minutes.
Step 4: Remove off the heat and add the coffee, vanilla extract, baking powder salt, whisk and set aside.
Step 5: In another large bowl, sift the flour and create a well in the centre.
Step 6: Add the wet ingredients and mix evenly until incorporated and smooth.
Step 7: Grease a baking tray with butter and place the batter inside.
Step 8: Bake for exactly 40 minutes.
Step 9: Remove and allow to cool for 20 minutes before serving.
