Instructions

Step 1: In a sauce pan heat oil and add carrots fry until edges begin to brown
Step 2: Add ginger and onions and fry for a further 10 minutes
Step 3: Add the water and cover to allow to cook until carrots are just cooked through.
Step 4: Place the mixture in the blender and blend until smooth consistency is attained.
Step 5: Return in the pan and add cooking cream and a quarter cup of water to thin soup slightly.
