Instructions

Step 1: Blanch your potato wedges in the boiling water and set aside.
Step 2: Heat your 1.5 litre oil and deep fry the potatoes until slightly browned and crispy, set them aside.
Step 3: In a large pan melt your butter and add your red onions and cook down until slightly browned.
Step 4: Add your cajun spice and cook until aromatic.
Step 5: Add your potatoes and mix well, add your coriander and do the same.
Step 6: Serve hot.
