Step 1: In a large bowl incorporate the spices, flour , salt, egg yolks, 1/4 cup of water and buttermilk and make a batter.
Step 2: Whisk the egg whites until fluffy and stiff.
Step 3: Fold int the batter into the egg whites until fully incorporated, add the fish fingers and ensure submerged.
Step 4: Heat 5 cups of oil and place each finger into the oil and fry until golden brown.
Step 5: Serve hot, with lemon wedge.
