Ingredients
3 large potatoes
1/2 red onion
500gms minced beef
1 teaspoon paprika powder
1 1/2 teaspoons cumin powder
1 egg
1/4 cup of water
1 teaspoon tomato paste
1/2 cup mozarella cheese, grated
Instructions
Step 1: Place your potatoes in a casserole dish, season with salt and a little oil, bake in a hot oven for 45 minutes at 180 degrees.
Step 2: In a large pan heat 2 tablespoons of oil, add your minced beef and cook down until seperated.
Step 3: Add your spices and tomato paste then cook down for 5 minutes before adding your onions and cooking for 10 minutes
Step 4: Add the water and allow to evaporate and thicken, set it aside.
Step 5: Remove your potatoes and allow them to cool for about 10 minutes.
Step 6: Cut off the tops, and scoop out some of the flesh ensuring you dont go all the way to the bottom.
Step 7: Scoop some of your minced meat at the bottom filling it halfway up.Whisk your eggs and pour over the minced meat.
Step 8: Sprinkle with cheese and re-bake for 10 minutes.
Step 9: Serve hot.
