Step 1: Layer your vegetables in a casserole dish, starting with the eggplant and ending with the onions.
Step 2: In a bowl mix the ketchup, sweet chili, dried herbs, vinegar and oil
Step 3: Sprinkle over the vegetables and bake for 35 minutes at 180 degrees.
Step 4: Serve Hot.
